Sweet potato, Spinach & Blueberry Meatballs
Some good quality beef buddies up with 3 of my absolute favourite nutrient dense foods - berries, leafy greens, and of course the sweet taters......what a team! Really what more can you ask for from a humble meatball?!
Talk about a brilliant way to get in your different coloured veggies! I took inspiration from a few different variations I've seen online and absolutely LOVE the nutrient variety in the end result. Take these up a veggie notch and serve them with some courgette noodles, squash spaghetti, or in lettuce wraps with fresh tomato, cucumber and avocado. A great portable meal prep option for the week!
Ingredients;
1kg beef mince (or pork, chicken/turkey mince)
2 small or 1 large grated sweet potato
1 & 1/2 cups packed spinach
2/3 cup blueberries
1 TBSP maple syrup - optional
1 tsp each of sea salt, dried thyme and dried sage (could try subbing with rosemary or mixed herbs)
Makes 32 (or around 8 servings)
Method;
Prep the veg - grate sweet potato, chop spinach and measure out.
Add all to a bowl along with the rest of ingredients except for the blueberries, combine well using hands to properly incorporate all the herbs
Add the blueberries and mix until evenly distributed.
Scoop into roughly even balls (I used a heaped ice cream scoop and made 32 overall)
Bake in the oven preheated to 180 C for around 25 mins until cooked through/browned.
