Apple Almond Porridge
....with sneaky added veggies!
Have you heard of grated courgette in porridge?!
I love it for 2 main reasons; the first obvious one being it means getting a portion of veg in a meal that you typically wouldn't, so more beneficial micro-nutrients and fibre, and secondly it makes for a bigger portion of porridge to feed my greedy appetite.
Team this with chia seeds = giant bowl for one
If anyone tells you that you wont be able to tell it's there...they are likely fibbing just a little BUT only for it giving a slightly different texture, taste wise it's still a sweet tasty comforting bowl we know and love!
Ingredients;
1/2 grated apple
1/3 grated courgette
1/2 cup oats
1 cup water (or milk of choice if you prefer)
1 TBSP chia seeds
1/2 scoop vanilla or plain protein powder*
1/2 TBSP almond butter plus extra for topping if wanted
*I added a little protein powder which also had some sweetness to it thanks to some stevia, if you don't have or use this you may want to add a little maple, honey, vanilla, or mashed banana to sweeten.
Method;
Start cooking the grated courgette and apple in the water for 2-3 mins before the oats so that they have a chance to soften. Then add in your oats along with the water (or milk), chia seeds, cinnamon, and salt.
Once it is pretty much cooked stir in the almond butter and the protein powder.
I topped mine with blueberries, extra cinnamon, another 1/2 tbsp of almond butter, and a couple of Brazil nuts (a top nut for immune health FYI).
