PB Honey Nutters!

(With a step by step picture recipe)

We have abandoned the usual ingredients you would find in the classic Nutter Butter cookies, and upgraded them with some healthier alternatives, relying on nut butter, almond flour, and some honey to sweeten. No nasty oils, refined sugar or white flour, plus they are dairy, and gluten/grain free.

Peanut butter = Good

Honey = Good

Cookies = GOOD!

Convinced yet? OK, lets bake….

Ingredients;

  • 1/2 cup peanut butter (or other nut butter of choice)

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 2/3 cup almond flour

  • 1/2 tsp baking powder

  • 1/8 tsp salt

Method;

  1. Mix together the peanut butter, honey, & vanilla.

  2. Add in the almond flour, salt, cinnamon, baking powder, and mix well to combine everything.

3. Roll into around 1 inch balls and place side by side on a lined baking tray.

4. Squash them in to shape by pressing a fork down on each, flattening and marking.

5. Create the crisscross mark by pressing the other way with the fork, as pictured.

6. Bake for 10-12 mins in an oven preheated to 170 degrees C until beginning to turn a golden brown.

7. Leave to cool for 10 mins before attempting to move.

8. For the filling mix together 1/4 cup peanut butter (or nut butter of choice) with 1 TBSP of honey.

9. Spread a little on half of the cookies, before sandwiching with the other side.

I adore the look of these cookies for fairly minimal effort, and the small handful of ingredinets required makes them an easy one to whip up for gifts or just for yourself!
